Our Story

Inspired by the Mayan belief that the earth, sun and stars are the centre of all things, powerful and all knowing. The “O” in Condesa, represents the sun, the giver of life, a strong symbol in ancient Mayan storytelling.  The line underneath represents the earth and the dotted circle above, the heavens.

Originally from Mexico, Samantha left her country to immerse herself in an incredible adventure. She has since been on a mission to promote the beautiful cuisine and culture of her home country.  After having the amazing opportunity to live and work in beautiful Prince Edward County for the past  2 years, she has now opened La Condesa in the heart of Wellington.  Being part of this community and showcasing Mexican culture is a dream come true for her.

Rizal was blown away by authentic Mexican cuisine many years ago, finding it unlike anything he had ever tasted before. He has since made it a focus to immerse himself in all aspects of Mexican kitchens. His desire to showcase and share his love of the food with the guests of La Condesa is apparent through his attention to detail when plating each individual taco.


Matthew Gilsenan

Matthew Gilsenan - beverage director

Known by his friends as a Mexican trapped in the body of an Australian, Matt has refined his knowledge and passion for all things Tequila and Mezcal. Shifting away from the sweeter side of cocktails and focusing on balancing citrus, agave and smoke, his drink menu aims to compliment and accentuate Chef Valdivia’s food offerings.
